30 degree elbows offer flexibility in your layout and installation of your air system.  It is far better to use an elbow that is the right angle than to try and cut another elbow like a 90 degree down to what you need.  If you cut elbows down you will have an angle at the connection joint and potential wear on your coupler and grain damage.
